Dimension Question

AutoCAD Dimension

I recently received a cad file with dimensions that come in as individual elements (lines, mtext, solid arrow).

When I create a dimension, I am able to change the text to whatever I want it to be.

I am trying to recreate this dimension style just to know what’s going on here.
